Sauternes is a region of the Graves section in Bordeaux, France. The Sauternes region is first and foremost known for its sweet white wines, simply called Sauternes. The Sauternes wines are produced from grapes that have been affected by Botrytis cinerea - also known as noble rot This causes the grapes to become partially raisined before they are harvested - and this results in very concentrated and distinctively flavored wines. It is not easy and it is not cheap to make a Sauternes. The noble rot has to have the perfect level and only the most affected grapes are harvested and used for Sauternes. This means the yield is very low and therefore, Sauternes wines are often rather expensive. It is produced according to the traditional wine making methods and has been aged in stainless steel vats and 12-18 months in oak barrels. The wine has a nice golden colour, pretty fruit expression of apricot, mango and exotic fruits, round, soft and sweet fruity taste followed by a long and pleasant finish. It is a well built and powerful Sauternes. Often, Sauternes is enjoyed as a dessert itself, but this wine is also perfect as aperitif, to strong cheeses, foie gras and desserts which are not too sweet.
